YOMO Gluten Free Shortbread Biscuit Mix is full of nutritious almond meal and other pure ingredients. It is super easy to make and can be made two delicious ways, depending on your dietary requirements and preferences. All YOMO Gluten Free baking mixes are vegan, though they can be made with dairy if that’s what you like, because it's all about choice.

Ingredients for Plant Based Option:

  • 100g cold dairy-free spread

Ingredients for Dairy Option:

  • 100g butter at room temp, cut into cubes

Directions:

  1. Combine baking mix with butter or dairy-free spread in a large bowl or bowl of a standard mixer and mix until you have a smooth dough.
  2. When you have a smooth dough, transfer onto a sheet of plastic wrap and roll into a log about 20cm long.
  3. Wrap the dough and refrigerate ~3 hours.
  4. Preheat oven to 150°C.
  5. Remove dough from the fridge and cut the log into round approximately 1cm thick.
  6. Place rounds onto a lines baking tray, leave 3cm between each biscuit.
  7. Bake for 30 minutes or until shortbread is golden around the edges.
  8. Cool shortbread completely before enjoying!
