Stove Top: Open this pouch, pour risotto into a small, warm, non-stick pan over a low heat. Add 2-3 teaspoons of warm water. Warm through for 3 minutes on a medium heat, continuously stirring. Pour into a bowl and enjoy!

Microwave: Squeeze pouch before heating, tear top corner of pouch open to 2cm. Heat upright in microwave on high for 3 minutes. Tear open, remove carefully and stir with a fork to separate and ensure it has warmed evenly, pour into a bowl and enjoy!

Ingredients:

  • 500g FODMAPPED Roasted Pumpkin, Spinach & Feta Risotto
  • 2 free range eggs
  • 100g spinach leaves
  • 400g cold roast chicken
  • 1/2 red capsicum finely sliced
  • Freshly ground black pepper
  • 2 tbsp finely grated Parmesan cheese

Directions:

  1. Preheat oven to 180°C
  2. In a large bowl combine FODMAPPED Roasted Pumpkin, Spinach & Feta Risotto, eggs, spinach leaves, sliced roasted chicken and red capsicum - mix well to combine.
  3. Pour mixture into a lightly greased 20cm shallow baking dish, season with black pepper.
  4. Sprinkle over the grated Parmesan cheese.
  5. Bake the pie in oven for 20 minutes until egg is set and pie is golden. Remove from oven and cool for 5 minutes prior to serving. Delicious served hot or cold.
