Morning Tea can be a tricky time of day. Make it simple with Well & Good’s Gluten Free Muffin Mix. With this product, you can create a huge range of baked goods including orange poppy seed cake, tea cake, waffles, and, of course, muffins.

This recipe can be made vegan too! Simple use a vegan egg replacer or following the instructions on the box.

Free from gluten, wheat, dairy, lactose, tree nuts, peanut, soy, and suitable for those following a Vegan/Vegetarian diet. Kosher.

Ingredients:

    Included in box:
    • 400g muffin mix

    Other ingredients not included:

    • 2 medium eggs
    • 1 cup (250ml) water
    • 1/2 cup (125ml) oil
    • 1 cup of your favourite fruit (optional)
    Directions:
    1. Preheat your oven to 195°C (180°C fan forced).
    2. Grease a 12 cup muffin tin or line with muffin patty pans.
    3. In a large bowl, stir muffin mix, eggs, water and oil with a wooden spoon until all ingredients are well combined.
    4. Fold in your favourite filling and pour batter into prepared tin.
    5. Bake for 24-28 minutes.
    6. Once baked, gently remove from muffin tin onto a wire rack to cool down completely.

    To make these muffins Vegan, simply replace the eggs with 1 teaspoon of GF baking powder and 1 mashed banana, or alternatively use an egg replacer. Bake for 20-25 minutes.

    Ingredients (not included in box):

    • 125g cream cheese, softened
    • 2 teaspoons finely grated lemon rind
    • 1 1/2 cups icing sugar mixture

    Directions:

    1. Using an electric mixer.
    2. Beat cream cheese and lemon rind until smooth.
    3. Gradually beat in sugar until smooth.

    Gluten free flour mix (rice, corn, potato), castor sugar, thickeners (modified tapioca starch, guar gum, raising agents (sodium acid pyrophosphate, sodium bicarbonate), maltodextrin, vegetable emulsifier (mono and diglycerides of fatty acids), natural vanilla flavour, iodised salt.
