Savoiardi is perfect for dipping into coffee, hot chocolate or tea or enjoy it in your favourite desserts; tiramisu or trifle. Free from gluten, wheat, lactose, palm oil and preservatives, with no added milk or soya.
1 package Schar Savoiardi Biscuits
200g mascarpone cheese
3 egg yolks
3 egg whites
4 tbsp sugar
1 tbsp cocoa powder
Beat 3 egg yolks with sugar, then add the mascarpone. Beat the egg whites until stiff and then carefully fold into the mixture.
Soak the Savoiardi well in coffee; they should not be too hard in the middle.
Arrange the Savoiardi closely together in a flat glass or ceramic dish. Cover them with half of the mascarpone mixture, then add another layer of Savoiardi and top with another layer of the mascarpone mixture. Sprinkle with cocoa powder and refrigerate for at least 6 hours.
