  • 12 special woven layers of fine vermicelli
  • 12 sheets of rice paper
  • Vietnamese dipping sauce
  • 3-4 handfuls of julienne sliced vegetables like carrot, cucumber, lettuce, capsicum, mint and coriander.
  • 2 cups of either cooked and sliced chicken, pork, prawn, tofu, smoked salmon or a choice of meat from the deli.

Preparation:

  • Pour boiling hot water with a generous pinch of salt into a heat proof bowl and stir.
  • Add the vermicelli and soak for 1 minute and 30 seconds.
  • Julienne vegetables and slice meats/seafood fillings.

Assembly:

  • In a flat 23cm dish, add warm water.
  • Submerge one rice paper sheet, remove immediately and place onto a clean plate or board.
  • Place 1 sheet of vermicelli in the middle of the rice paper.
  • Place a mixture of the vegetables and meat/seafood fillings within the vermicelli.
  • Turn up the bottom of the rice paper over the filling.
  • Holding the filling in place, fold in the 2 sides, then roll up firmly.

Pro Tips:

  • Don't over-fill the rolls.
  • Place the soaked rice paper on a clean damp tea-towel to assist with rolling.
