One cake mix, many gluten free variations. Well and Good provides you with a basic mix, you add your additional ingredients to create your gluten free masterpiece! Some ideas include: gluten and dairy free carrot cake, banana cake, apple cake and zucchini cake. The possibilities are endless and the recipes are easy – simply toss in the mix and add your extras.

This recipe can be made vegan too! Simply use a vegan egg replacer or chia seeds; instructions are included.

Free from gluten, wheat, dairy, lactose, tree nuts, peanut, soy, egg, and suitable for those following a Vegan/Vegetarian diet. Halal and Kosher.

Ingredients:

  • 1 packet (450g) All Purpose Cake Mix
  • 3 Eggs
  • 1/2 cup (125ml) water
  • 1/2 cup (125ml) oil
  • 1 or 2 grated carrots
  • A hand full of Walnuts (optional)

Directions:

  1. Preheat your oven to 175°C (160°C fan forced).
  2. Grease a 23cm x 7cm round cake tin.
  3. In a large bowl combine All Purpose Cake Mix, water, eggs and oil, mix well until all ingredients are smooth.
  4. Fold grated carrot and walnuts into the batter and pour the mixture into the cake tin.
  5. Set to bake for 55-65 minutes.
  6. Rest for 5 minutes in the cake tin, then place on a wire rack to cool.

Ingredients:

  • 125g cream cheese, softened
  • 2 teaspoons finely grated lemon rind
  • 1 1/2 cups icing sugar mixture

Directions:

  1. Using an electric mixer.
  2. Beat cream cheese and lemon rind until smooth.
  3. Gradually beat in sugar until smooth.

Gluten free flour mix (rice flour, corn starch, maltodextrin, tapioca starch,), brown sugar, non aluminium raising agents (450,500), thickeners (1412, 415, 461), vegetable emulsifiers (471, 475), natural vanilla flavour, iodised salt, colour (caramelised sugar), spice (cinnamon), stevia.
